Serves 4
1 egg yolk
1/2 dl (1.5 fl. oz) red wine vinegar
50 g (1.75 oz) Dijon mustard
4 dl (13 fl. oz) sunflower seed oil
Salt and pepper
200 g (7 oz) prawns
400 g (14 oz) Greenland halibut
1 head of lettuce
2 tomatoes
12 slices of sandwich bread
Make a mayonnaise of the egg yolk, red wine vinegar, mustard and oil. Season with salt and pepper.
Steam the prawns and halibut. Let the fish cool and chop it into small pieces.
Wash the lettuce and tomatoes. Slice the tomatoes.
Serving:
Cut the crusts off the bread and butter them with the mayonnaise. Place fish, prawns, lettuce and tomatoes on the slice of bread. Continue in this manner to form three layers. Add a little garnish on top.
